Treat Tuesday-Queso Quiche & Avocado
We have so many sweets in the month of December, I thought I would share a savory treat that you could make for breakfast on Christmas morning. This is a great southwest twist on a traditional quiche and it can be assembled quickly for a nice hearty start to Christmas day. It is even festive with the green and red guacamole!!
Start with a deep dish crust. To really make this quick you can use a store bought crust, but beware, you really need a deep, deep dish crust to hold all of the egg mixture. I would recommend a crust you can mold into your own deep dish pie pan or pull one of your homemade crusts out of the freezer.
Then dice and sauté some onions. As you can see here, I like my onions really small so I use my food processor to chop them up.
Add ground beef, green chilies, and some taco seasoning, cooking until the meat is completely browned.
Spread shredded cheddar cheese over the bottom of the pie crust.
Next add in the the ground beef mixture. Finally whisk together some eggs and half-and-half and pour over the ground beef. Bake for 45 minutes or until set.
For the avocado salsa, mash avocados and a tomato, add in a diced jalapeño (I add in some of the seeds for a little kick) and mix with lime juice.
Put a dollop of the salsa on a piece of the quiche and get your Christmas morning started off with a great breakfast while you check your stocking!
