Queso Quiche with Avocado Salsa

This recipe is great for Christmas morning and is a nice twist on a traditional quiche. Make sure you purchase a really large pie crust or make your own deep dish one.

Ingredients
  

Quiche

  • crust for a 9" deep dish pie
  • ½ lb. ground beef
  • ¼ cup diced onion
  • 1 can (4 ½ oz.) chopped green chilies
  • 2 Tablespoons taco seasoning mix
  • 1 ½ cups grated cheddar cheese
  • 3 eggs
  • 1 ½ cups half-and-half
  • ½ teaspoon salt
  • teaspoon freshly ground black pepper
  • shredded lettuce
  • diced tomatoes

Avocado Salsa

  • 2 ripe avocados, mashed
  • 1 clove garlic, minced
  • 3 Tablespoons fresh lime juice
  • 1 tomato diced
  • 1 jalapeño pepper seeded and minced

Instructions
 

Quiche

  • Preheat oven to 400°.
  • Bake pie crust for 7 minutes. Remove from oven and reduce heat to 375°.
  • Brown ground beef, onion, green chilies and taco seasoning. Drain.
  • Sprinkle cheese over bottom of pie crust and spread with beef mixture.
  • Beat eggs, half-and-half, salt and pepper. Pour over pie.
  • Bake until a knife inserted off-center comes out clean, 45 minutes.
  • Let stand for 10 minutes. before cutting. Serve with Avocado salsa, shredded lettuce and tomatoes on the side.

Avocado Salsa

  • Combine all ingredients, cover and chill until ready to serve.
