Queso Quiche with Avocado Salsa
This recipe is great for Christmas morning and is a nice twist on a traditional quiche. Make sure you purchase a really large pie crust or make your own deep dish one.
Ingredients
Quiche
- crust for a 9" deep dish pie
- ½ lb. ground beef
- ¼ cup diced onion
- 1 can (4 ½ oz.) chopped green chilies
- 2 Tablespoons taco seasoning mix
- 1 ½ cups grated cheddar cheese
- 3 eggs
- 1 ½ cups half-and-half
- ½ teaspoon salt
- ⅛ teaspoon freshly ground black pepper
- shredded lettuce
- diced tomatoes
Avocado Salsa
- 2 ripe avocados, mashed
- 1 clove garlic, minced
- 3 Tablespoons fresh lime juice
- 1 tomato diced
- 1 jalapeño pepper seeded and minced
Instructions
Quiche
- Preheat oven to 400°.
- Bake pie crust for 7 minutes. Remove from oven and reduce heat to 375°.
- Brown ground beef, onion, green chilies and taco seasoning. Drain.
- Sprinkle cheese over bottom of pie crust and spread with beef mixture.
- Beat eggs, half-and-half, salt and pepper. Pour over pie.
- Bake until a knife inserted off-center comes out clean, 45 minutes.
- Let stand for 10 minutes. before cutting. Serve with Avocado salsa, shredded lettuce and tomatoes on the side.
Avocado Salsa
- Combine all ingredients, cover and chill until ready to serve.
