Treat Tuesday-Cranberry Streusel Muffins

This is it, all the plotting and planning will culminate this week into the best Thanksgiving day feast! Start the morning off right with these wonderfully moist and crumbly muffins that will get everyone in your home in the holiday spirit! This recipe is super easy and the muffins can be made the night before or the morning of Thanksgiving using very few dishes.

Start by making the streusel topping which may be the next best thing to the fresh cranberries! It’s nice and simple using brown sugar, cinnamon, and butter.

To make the muffins, whisk flour, baking soda, baking powder, and cinnamon together.

Next stir together brown sugar, vegetable oil, orange rind and an egg. The key here is to use freshly grated orange zest. Don’t skip this step, it is what gives the muffins a great orange flavor. Then add in buttermilk and vanilla.

I used fresh whole cranberries for these muffins, they puff up when baking then burst and load the muffin with a ton of cranberry flavor!

Fold in the berries.

Fill the muffin tins with batter and then top each with some of the streusel topping. Bake for about 20 minutes then let cool slightly before removing them from the tin.
