Treat Tuesday-Prune Cake

You read that correctly, Prune Cake. Remember the wonderful dried fruit basket I told you I received over Christmas? Well, this was the last fruit left and I had actually found a recipe that I have been wanting to try from The Pioneer Woman Cooks, Cookbook. Think spice cake with gooey icing soaked into the cake and you can just start imagining how wonderful this tastes!

Look how beautiful these prunes are! Well ok, maybe they aren’t the most photographed fruit out there, but these are so wonderfully plump and soft. For the cake they get boiled for just a bit and mashed up.

The cake batter is wonderfully spicy with cinnamon, allspice, and nutmeg.

Sugar, eggs, vanilla, and buttermilk round out the sweet batter.

Once the mashed prunes are added, the cake is poured into the pan and baked for about 35 minutes or until golden brown.

While the cake is baking, you make the buttermilk icing. It consists of buttermilk, sugar, vanilla, and light corn syrup. It sits on the stove for about 5 minutes getting nice and bubbly.

Once it is done, it will be a beautiful caramel color and it is then poured directly over the top of the warm cake.

Let it cool slightly and dig in. I promise, you will have no idea you are eating prune cake!
