Treat Tuesday-Zucchini Muffins

The best zucchini muffins. Smelling these baking in the oven takes me back to my school days when I would come home and find these on the counter just waiting to be devoured. It is a super easy recipe.

Start with the zucchini. I shred mine in the food processor with the shredding attachment.

Next I dump out the zucchini in a bowl lined with paper towels. It is very important to drain the water out of the zucchini or your muffin batter will be too watery. Let the shreds sit on the paper towels as you start the rest of the batter.

Whisk eggs, sugar, vanilla, and canola oil.

Next add in the flour, baking powder, and the best ingredient…the cinnamon! Mix gently until the batter comes together.

Finally, giving the paper towel a good ringing, drop the shredded zucchini in the bowl and gently stir until it is well combined.

Spoon into a muffin tin and bake.

The perfect warm, cinnamon-y goodness you need.
