Treat Tuesday-Yellow Cupcakes with Vanilla Butter Frosting
Happy St. Patty’s Day!! With the “green” holiday around the corner, I was trying to come up with a treat that had the requisite green color but didn’t taste weird or look unappetizing. This frosting is great for a few drops of food coloring for any occasion you might be celebrating.
I bake these cupcakes frequently, the batter is easy to make and the cakes are super moist thanks to the addition of buttermilk.
I fill the muffin tins about 2/3 full, and they rise just the perfect height for frosting.
Once they are cool, I make a basic frosting: 4 1/2 Tablespoons butter, softened, mixed with 2 1/4 cups sifted powdered sugar, 1 1/2 Tablespoons milk, and 1 1/2 teaspoon vanilla. I whip this together in an electric mixer and then I added about 5 drops of green food coloring.
