Treat Tuesday-Thin Mint Cake

Some days/weeks/months you need a super treat. This is one of those times. This is the cake. One bite and you immediately think of an Andes Mint! The best part…this is a super easy recipe!

While it looks like a multi-layer cake, it is really just one pan and then you will slice the cake horizontally. So one pan, layered with parchment paper and sprayed with cooking spray.

The batter starts out with flour, sugar, and cocoa powder.

To kick up the flavor, almond and vanilla extract. This brand is my favorite.

Add in the wet ingredients which include water and canola oil and stir. That’s all there is to the batter!

Pour into the pan and bake.

Once it cools for 10 minutes flip it onto a wire rack and peel off the parchment.

After the cake has cooled completely you slice it. This cake is perfectly moist and that makes it super easy to slice.

Now to create the mint filling. Start with butter and powdered sugar.

Add in mint (I used peppermint extract), vanilla, and green food coloring, along with some half-and-half. I accidentally bought heavy whipping cream, so I used that…just heavenly!

Spread over the bottom layer of the cake and replace the top layer.

To finish off this super treat, a chocolate ganache glaze!
