Treat Tuesday-Strawberry Pizza

This was a summer staple in our house growing up. Once the strawberries were plump and ripe, this dessert showed up after a day of playing in the pool. The “crust” is one big sugar cookie, topped with “frosting” (cream cheese, whipped with some sugar and vanilla), then mashed strawberry compote followed by a topping of sliced, fresh strawberries. Delicious!

To start the crust, add cold cubed butter, powdered sugar, and flour to a food processor.

Then blend the ingredients until a soft ball forms.

Turn the dough onto a pastry sheet and roll it out onto a sheet of waxed paper. Then you can simply roll the dough up and turn it out onto your pizza pan.

Bake the cookie for about 15 minutes until it is lightly browned.

Once it is cooled whip up the cream cheese frosting.

Then spread the frosting over the top of the cooled cookie.

It is so easy to spread this evenly (and maybe save a little so you can lick the spoon!)

Next clean and remove the stems of a quart and a half of strawberries.

Mash them with a large fork or potato masher to equal 2 cups.

Add the mashed berries to a saucepan with some sugar and cornstarch, bringing to a low boil and stirring until thickened. Then let cool completely.

Finally, spread the mashed strawberries over the cream cheese. Doesn’t it look like a pizza with tomato sauce waiting for pepperoni?!

Top with sliced strawberries.
