Treat Tuesday-S’mores Bars
Think Rice Krispie Treat meets a S’more. These fall in the “dangerous dessert” category, as in you can’t just eat one or two. This is one of those treats where you will keep walking by the pan and have to pick up the knife to “even off a row”. Don’t act like you don’t know what I am talking about!
You start with old fashioned oats, not the quick cooking ones. Spread them out on a pan and toast them up in the oven for just a few minutes.
Next are the Rice Krispies. I don’t know how such a basic cereal can be so good, but it really is. When we were kids we could get this from the store whenever we wanted because it was on the “approved” cereal list. Seriously. Those wonderful sugar cereals like Lucky Charms and Fruit Loops…my sister and I would only get one box of those a month. Could be why I have such an affinity for sweet treats now, deprivation of sugary cereals as a kid.
Once the cereal and oats are mixed together, it’s time to make the syrup with sugar, butter, and corn syrup…what?? I didn’t say these were healthy bars! Ok, let that mixture come to a boil. Then it will be poured on top of the cereal mixture.
Next miniature marshmallows are added.
This is where the Rice Krispie Treat texture comes in, but I find these are easier to form into the pan.
Now the S’more part. Add the remaining miniature marshmallows all over the top.
Then a layer of chocolate chips.
The bars are put in the oven just until the marshmallows puff up and become golden brown. Let them cool a little or a lot, depending on how soft you like your chocolate when you cut the bars.
Pack up a box of treats to share with a friend or loved one. This will help you not eat the whole pan yourself.
