Treat Tuesday-Chocolate Waffles

I got a new toy. My decades old waffle iron finally died. I debated on whether or not I should replace it but when you want waffles, only homemade will do! Then I found a recipe for chocolate waffles. I may have gone a little crazy.

So here is my new gem. It is a basic two square Belgium waffle iron with seven heat settings by All-Clad. It’s pretty much plug and play with two great features. First, it has this awesome drip bin in the back in case you accidentally fill your waffle iron too full (I always do). This catches the batter that may drip out and saves a huge mess on the counter. It also has a handle that does not get hot.

Now for the waffle mix. Waffles are one of the few exceptions where I will use a store bought mix, however for chocolate, I made the batter. The dry ingredients including cocoa are mixed together.

The eggs are separated and the yolks are added to the dry ingredients.

Some milk, vanilla, and melted butter are added in and the batter becomes nice and thick.

Next the egg whites are beat into stiff peaks. This sounds hard but with an electric mixer it is super quick. Beat them until foamy.

Then keep going on high speed until the whites firm up.

Fold the whites into the batter to make it nice and fluffy.

Pour into the waffle iron and let bake until slightly crisp. You aren’t supposed to peek while they are cooking but I couldn’t help it!

These are such a treat on their own.
