Treat Tuesday-Pumpkin Pie Bars

Cruising through October and still churning out great pumpkin treats, and this recipe is a treat! These taste just like pumpkin pie without having to make a pie crust. The base of this dessert is more like a shortbread.

Start with flour, brown sugar, granulated sugar, and some cold, cubed butter.

Using a pastry blender, blend the flour mixture until you have coarse crumbs.

Next stir in some old-fashioned oats.

Set one cup of the crumb mixture aside, and press the rest of the crust into a 13″ x 9″ pan. Bake for 15 minutes and let cool for 5 minutes.

Then blend the softened cream cheese (make sure it is room temperature!) with the remaining granulated sugar until fluffy. Add in the eggs, pumpkin, and pumpkin pie spice. For the best flavor make your own spice mixture: PUMPKIN PIE SPICE

Finally, pour the pumpkin batter over the crumb crust and spread evenly.

Top with the remaining crumb mixture.

Bake until set about 20 minutes, then let cool completely and refrigerate.

The topping is a little crunchy and a little chewy from the oats and the pumpkin pie taste is perfect!
