Pumpkin Pie Bars

These bars taste just like Pumpkin Pie!
Plan Ahead Note: the cream cheese needs to be softened and the eggs brought to room temperature.

Ingredients
  

  • 1 ⅓ cups flour
  • ½ cup brown sugar packed
  • ¾ cup granulated sugar
  • ¾ cup butter cut into cubes and chilled
  • 1 cup old-fashioned oats
  • 1 8oz. pkg. cream cheese softened
  • 3 eggs room temperature
  • 1 15oz. can pumpkin
  • 1 Tablespoon pumpkin pie spice

Instructions
 

  • Preheat oven to 350°.
  • Line a 13" x 9" pan with aluminum foil. Grease foil.
  • Mix flour, brown sugar and ¼ cup sugar in medium bowl.
  • Cut in butter with pastry blender until mixture represents course crumbs.
  • Stir in oats.
  • Reserve 1 cup oat mixture and press remaining mixture into bottom of pan.
  • Bake 15 minutes at 350°.
  • Beat cream cheese with remaining ½ cup sugar until light and fluffy.
  • Add in eggs, pumpkin and pumpkin pie spice in mixer until well blended.
  • Pour over crust and sprinkle with reserved crumb mixture.
  • Bake 25 minutes. Cool completely. Cut into bars and store in refrigerator.
