Pumpkin Pie Bars
These bars taste just like Pumpkin Pie!Plan Ahead Note: the cream cheese needs to be softened and the eggs brought to room temperature.
Ingredients
- 1 ⅓ cups flour
- ½ cup brown sugar packed
- ¾ cup granulated sugar
- ¾ cup butter cut into cubes and chilled
- 1 cup old-fashioned oats
- 1 8oz. pkg. cream cheese softened
- 3 eggs room temperature
- 1 15oz. can pumpkin
- 1 Tablespoon pumpkin pie spice
Instructions
- Preheat oven to 350°.
- Line a 13" x 9" pan with aluminum foil. Grease foil.
- Mix flour, brown sugar and ¼ cup sugar in medium bowl.
- Cut in butter with pastry blender until mixture represents course crumbs.
- Stir in oats.
- Reserve 1 cup oat mixture and press remaining mixture into bottom of pan.
- Bake 15 minutes at 350°.
- Beat cream cheese with remaining ½ cup sugar until light and fluffy.
- Add in eggs, pumpkin and pumpkin pie spice in mixer until well blended.
- Pour over crust and sprinkle with reserved crumb mixture.
- Bake 25 minutes. Cool completely. Cut into bars and store in refrigerator.
