Treat Tuesday-Orange Cranberry Loaf
Do you have any cranberries leftover from the holidays stashed in your freezer? This is a great recipe to throw those into with some of the wonderful, fresh oranges that are available for a little while longer.
Start by prepping your loaf pan. You can use butter and a dusting of flour or my favorite is this Pam Baking Spray.
Measure out a cup of the cranberries, making sure there are not any smashed or dented ones.
Next, mix butter and sugar together until light and fluffy.
Add in eggs, fresh orange zest and a mix of flour and milk.
Then lightly flour the cranberries and fold them into the batter.
Pour into your prepared loaf pan and bake for one hour.
The loaf will rise and become golden brown.
Finally, make the orange glaze using freshly squeezed orange juice, don’t cheat here and use something from a bottle!
In a small saucepan mix the orange juice and granulated sugar, heating just until the sugar dissolves.
Poke holes in the top of the loaf and brush this glaze all over the top and down sides.
Best treat of sweet and tart.
