Treat Tuesday-Oatmeal-Apple Butter Squares
I have always loved Apple Butter. As a kid I would spread it on toast, english muffins, and I would make peanut butter and apple butter sandwiches. My sister-in-law gave me a jar of Apple Butter from Buc-ee’s. I must stop here and give you the lowdown on Buc-ee’s if you have never had the great experience. Buck-ee’s is a convenience store on steroids! They are in southern Texas and if you are on a road trip, this is the stop with more than 80 gas pumps and just as many restrooms (that are incredible spotless I might add), and homemade bbq cooking on the spit. Add a giant general store and you have a new destination spot along the highway.
Ok, back to the treat. So when I received this wonderful jar of Apple Butter and found this recipe and knew it would make the perfect dessert.
You start with brown sugar and melted creamy peanut butter.
Mix the two together and beat until light and fluffy. (for you Devo fans, “whip it, whip it real good”…oh I crack myself up!)
Next you add in flour and oatmeal along with some milk and you get a nice thick dough.
Press it into the pan and then add a layer of the Apple Butter.
The streusel topping consists of oats, brown sugar, flour, and butter all crumbled up on top.
Bake the bars for 30 minutes and let cool completely before cutting. I like to place the pan in the fridge to let them firm up.
These really should be called peanut butter and jelly bars. It’s time for a road trip. Stop by and visit the beaver the next time you are in South Texas, and pick up a jar of Apple Butter.
