Treat Tuesday-Mini Apple Cider Pound Cakes
I just can’t quite let the holidays go. Don’t get me wrong, the tree is put up, the lights are down, but I still crave that baking smell in my kitchen that reminds me of all the great holiday foods. I had intended on making these cakes months ago, but time got away from me.
I always think it is fun to make anything “mini” although these loaves really come out nice sized. I prefer using the higher end paper disposable loaf pans as opposed to the aluminum ones because the interior is lightly waxed and the cakes cut easily once cooled.
There are not any apples in these cakes. That’s right, no washing, peeling, coring, or chopping. The flavor comes from Apple Cider and Apple Pie Spice. This cider is my favorite. I start buying it every Thanksgiving and drink it all through the holidays. Just heat in a mug and add some mulling spices and I promise you will feel like you are 10 years old again. Spend money on fresh cider, don’t opt for the bottled, on the shelf kind.
The next best part of these cakes…the Streusel Topping. Have you ever eating anything that was not good with the word “Streusel” in it?!
These cakes are so moist. You could almost eat a whole loaf yourself…almost.
