Treat Tuesday-Cranberry Cobbler
The critics in my house scoffed at today’s Treat Tuesday. Apparently all treats are supposed to have some form of chocolate in them. Ok, I may be partly responsible for that mindset, but it is Christmas and cranberries must get a turn in the baked goods. Later I overheard that is was shocking how I could make a cranberry taste good! Amazing in fact.
This dessert is like combining apple pie and cranberry sauce together. That might sound a little weird but both recipes require slow cooking the fruit until it is nice and soft with a hint of sweet and tart. This makes a great holiday dish, I usually serve it on Christmas eve because it is fast to assemble and is an elegant way to end a great meal.
You start with a layer of chopped up granny smith apples, mixed with cranberries. Then a nice layer of granulated sugar to coat the top.
The cranberries remind me of the movie Elf (“hey Buddy, want to pick some snowberries?”)…
Next comes the best part, the crunchy topping made from oats, brown sugar, and melted butter.
Bake in the oven for one hour and the fruit will plump and the cobbler will bubble up on the sides.
