Treat Tuesday-Country Apple Cake
So many wonderful kinds of apples are popping up in the grocery stores this time of year. Here is a cake that is quick to make and is full of apple goodness. Country Apple Cake is a mix between a pound cake and an apple crisp.
Start with the batter, beating the butter and then sugar until light and fluffy.
Next add in the eggs and vanilla beating until well whipped.
Finally, fold in the flour, adding just enough milk so that the dough can be dropped from a spoon.
Add the dough to a loaf pan prepared with wax paper to make the cake easy to remove after baking. Smooth the batter with a spatula.
Now for the best part, add the apple slices evenly over the top of the cake. This will make for a slice of apple in each bite of the cake.
Assemble the streusel topping by placing the raw sugar, unsalted, chilled butter, and flour in a food processor and mix until you have coarse crumbs.
Sprinkle evenly over the apples and gently press it down into the batter.
Bake until golden. Let cool for 5 minutes and then serve warm. This cake is excellent as a dessert or for breakfast!
