Treat Tuesday-Cinnamon Nut Coffee Cake

This recipe takes me back to my childhood! Cinnamon Nut Coffee Cake was one of my mom’s staples for Thanksgiving morning, and as an afterschool snack, or a treat for a family in the neighborhood. One bite and I am instantly transported to roller skating in our basement, playing Atari or Simon, and beating my sister to the last piece of this cake!

So this recipe is where I stray a little off my path of “made from scratch” treats. In fact this uses items you would normally never find in my kitchen…box cake mix, instant pudding, and butter extract. But for nostalgia, I will make an exception, this recipe is that good!!

Now if you know me, you are also finding the fact that I have a recipe with “nuts” in the title quite odd as I do not care for any type of nuts in my baked goods. I do not put them in my cake, but I wanted to stay true to mom’s recipe for authenticity purposes!

Cinnamon Nut Coffee cake is quick to assemble. Start with making the cinnamon/sugar mixture.

Next in a stand mixer add the box cake mix. I used this King Arthur Flour Yellow Cake mix, the 24oz. box size.

Add in the rest of the ingredients and mix at medium speed until everything is well combined.

In a greased bundt pan (I used the Pam Baking Spray), put 1/3 of the batter in the pan.

Next sprinkle a layer of the cinnamon/sugar mixture.

Repeat the layers two more times ending with the cinnamon/sugar. Then bake for about one hour.

Let cool slightly, then invert onto a wire rack to cool completely.

Sprinkle with powdered sugar and serve!

Your family and friends will gobble (turkey pun intended…) this up!!
