Treat Tuesday-Chocolate Peppermint Shortbread

It’s Valentine’s Week! I’m not sure if that is a thing but there are reasons to be excited… Are you past the age where it is appropriate to make a paper bag mailbox for your Valentines? There is chocolate! Not expecting a garden of roses to be delivered to your doorstep? There is chocolate! Crossing your fingers that no one actually dressed up as Cupid comes by your office?! There is chocolate! Sticking with the chocolate theme, here is the best shortbread for ❌⭕️ day.

It’s an easy, buttery, cocoa dough with peppermint extract and mini chocolate chips that you simply mix and pat out into a circle.

By using a fork and scoring the pieces of shortbread, it will be super simple to cut once it has baked up nice and firm.

Now for the fun part. Melt some chocolate chips and spread the chocolate over the tops of the shortbread pieces. As you know, I am not the most artistic decorator. Let’s just say I like my desserts to “look homemade”. So yes, I had a sprinkle party and just tossed them onto the melted chocolate with reckless abandon. I may not get style points, but I think my Valentine’s will forgive me once they take a bite of the shortbread.
