Treat Tuesday-Brownie Pie

This is a super soft brownie wrapped up in a graham cracker crust with vanilla ice cream on top. The perfect summer treat!

Start with graham crackers in the food processor. I prefer to make my own graham cracker crumbs rather than buy them boxed. They are so much fresher when you crush them yourself.

Add brown sugar, cinnamon, and a pinch of salt.

Pour in some melted butter and mix until all the crumbs are covered.

Press into a pie plate and refrigerate while you make the filling. This does not even need to pre-bake!

For the brownie, melt chocolate and butter on top of a double boiler and then let cool once melted.

Add sugar, eggs, and egg yolks to the mixer.

Whip until thick and pale yellow.

Add vanilla and the chocolate mixture.

Then stir in flour, baking powder, and a pinch of salt. Spread into the graham cracker crust and sprinkle powdered sugar on top before baking.

This bakes for 30 minutes to yield the perfect brownie pie.
