Treat Tuesday-Fudge Cake

You have probably made something like this before. It is quick, easy, and there is a good chance you have all of the ingredients in your pantry. The addition of coffee in the batter makes this the perfect chocolate dessert!

To make the first layer start with flour, sugar, cocoa powder and instant coffee. I love to use the Starbucks Via packets for recipes like this.

Add in some milk and vanilla.

Spread the batter into a lightly greased pan.

For the second layer mix brown sugar and some more cocoa and coffee granules.

Sprinkle this evenly over the top of the batter in the pan.

Now for the fun/crazy part of the recipe! Take boiling water and gently pour it evenly all over the top of the first two layers. No stirring or mixing, just layer the water on the top and it will bubble as it slowly sinks in. Place it directly in the oven to bake.

Take it out of the oven to cool for 20 minutes. You can see the cake has risen to the top and a layer of fudge is now underneath the cake. This smells heavenly and tastes wonderfully rich as if you just finished a fancy restaurant dessert.

You can just see the layer of fudge under the cake. If you really want to take it up a notch, top the warm cake with vanilla ice cream.
