Treat Tuesday-Berry Shortbread Bars
These berry bars scream summer! They are super easy to make and you can use any berries you may have frozen to keep summer around as long as possible. One of my best friends gave me a cookbook from the Houston Junior League called, Peace Meals, and this recipe came out of that wonderful book.
The shortbread crust starts with flour, sugar, and salt mixed in a food processor.
Cubed chilled butter is then added to the processor and blended until the dough is crumbly.
One and a quarter cups of the dough is reserved for the topping.
The remainder of the dough is pressed into a pan and baked until golden brown.
While the pan cools, the fruit filling can be made. I used some mixed berries from my freezer and just sliced the strawberries so all the fruit would roughly be the same size.
Eggs, sugar, sour cream, and flour make up the filling with the fruit gently folded in.
Spread the filling on top of the cooled crust.
Sprinkle the remaining shortbread topping over the fruit filling.
Bake until the top is golden brown.
