Treat Tuesday-Banana Spice Bread

In the summer months, bananas can turn ripe quite quickly. Once your freezer is stocked with peeled, ripe bananas for smoothies, make this recipe with the remaining soft, mushy, speckled fruit.

The key is super ripe bananas, so the more spots, the better. Peel and mash them with a fork.

Mix the mashed bananas with some yogurt, eggs, and vanilla. Maybe not the most appetizing picture, but this part is key to how wonderfully moist this bread is.

The bananas are then folded into flour, sugar, baking soda, cinnamon, and nutmeg to make this easy batter that is spooned into a loaf pan.

Bake for 55 minutes, remove from the oven and let cool for slightly before turning it out onto a wire rack.
