Treat Tuesday-Chewy Oatmeal-Date Cookies
For Christmas one of my aunt’s sent me the most beautiful platter of dried fruit. We gobbled down everything but the dates and the prunes (more on those later) and I knew I wanted to bake something fantastic with these sweet treats. Enter these wonderful oatmeal cookies.
The main spice in this treat is nutmeg and not just nutmeg in a jar but freshly ground nutmeg. A friend gave me a nutmeg grinder a few years ago and ever since then, I have not purchased ground nutmeg. Trust me, fresh is the way to go.
The butter is whipped with the sugars until it is light and fluffy. Add in the eggs, one at a time, beating until well blended.
Now the dates. These dried dates were soft, chewy, and oh so sweet! They came pitted so they just needed to be finely chopped.
The flour and spice mixture is hand blended along with the oats and dates.
Roll the dough into large balls and place on a cookie sheet to bake for about 22 minutes.
The bottom and sides are slightly crunchy and the inside of the cookie is chewy and so wonderfully sweet.
This might count as a healthy cookie…oatmeal and fruit?!?!
