Treat Tuesday-Rum Balls

IMG_0128This is what my kitchen has looked like everyday for the past week.  I wish it looked like this all year!  Not to mention the wonderful aroma from the oven which is working on overdrive and holding up much better than my old dishwasher!

IMG_0131It’s just not Christmas without the song, “Grandma Got Run Over By A Reindeer”.  To keep with the boozy theme, every Christmas I make these Rum Balls.   It’s the basic, no bake, recipe. While kids seem to think they own Christmas, these cookies are made with the adult in mind that is pulling out all the stops to make this the best holiday ever…

IMG_0114Start with a box of Nilla Wafers that you put into the food processor and turn into crumbs.

IMG_0115Add some powdered sugar, sifted cocoa powder, light corn syrup, and rum!  (Bourbon also makes a great substitute here.)

IMG_0135Roll into balls, coat with powdered sugar and you are done!  My mom would make these every year and my sister and I would see how many we could sneak before we got caught.

RUM BALLS

IMG_0120I know there are a ton of other Christmas desserts to be had, but I love baking cookies this time of year.  During my cookie extravaganza I also made some of these melt in your mouth Butter Cookies.

IMG_0134This is another great recipe from my Grandmother Winkler.  Even though it lives on my website, I always pull out the original recipe card she gave me.  There is something to the simplicity of these and the beautiful Christmas color that make them a staple for me.

IMG_0117Once you make the dough, you refrigerate for one hour, form small balls and using the back of a 1/4 teaspoon, make a dent in the ball.

IMG_0116You can use your favorite jam to fill these, I love this Raspberry one.

IMG_0118Put a spoonful in the cookie and bake.  As they cook, the jam will bubble and the bottom of the cookie will become a golden brown hue.

IMG_0123Once out of the oven, the jam hardens ever so slightly making it delightfully chewy with the rich, buttery cookie.

IMG_0126My kids thought these would be boring until they tasted one.  I think the garbled word that came out of their cookie mouth was, “Amazing…”
