Treat Tuesday-Rhubarb Apple Crisp

It is rhubarb season and this Rhubarb Apple Crisp is a great way to use those long red stalks. Don’t shy away from this odd looking vegetable, it is easy to use, just clean and chop as you would a stalk of celery! I remember my great grandmother would make dishes using rhubarb and they also tasted fantastic, especially the desserts! This is a quick treat that is best served slightly warm with a scoop of vanilla ice cream on top.

Start with a few tablespoons of butter cubed and set aside to soften.

Next take the rhubarb stalks and chop into 1/2″ pieces.

Then peel, core, and chop a couple of Honeycrisp Apples.

Add some sugar, flour, and cinnamon to the rhubarb and apples, mixing well. Pour into a baking dish.

Finally, prepare the topping by mixing flour, old-fashioned oats, and brown sugar together. Cut in the softened butter until the mixture resembles small peas. Spread evenly over the fruit and bake until golden brown.

Let cool, then serve with vanilla ice cream.
