Treat Tuesday- Peanut Butter Cup Cookies

These cookies taste just like you unwrapped a candy peanut butter cup, but in cookie form! This recipe is the perfect ratio of chocolate to peanut butter. It is quite hands on, so it can be the perfect project for a rainy day.

Start by whisking together the flour, cocoa, baking soda, and salt.

In a mixing bowl, beat brown sugar, granulated sugar, butter, and peanut butter until light and fluffy.

Then add in the vanilla and egg, beating until combined.

Finally stir in the dry ingredients.

To make the filling, stir together the peanut butter and confectioners sugar until smooth.

With gloves or floured hands, roll the filling into one-inch balls.

Now to build the cookies! Roll a Tablespoon of the chocolate dough into a ball, then make an indent to place the peanut butter filling inside. Roll until the filling is covered then dip the top of the cookie into granulated sugar.

Press the bottom of a small drinking glass into the granulated sugar and gently press down on each of the cookies.

Bake and let cool.
