Treat Tuesday-No-Bake Peanut Butter-Fudge Ice Cream Pie
As the days get warmer, the craving for ice cream begins. When I came across this recipe I knew the whole family would love it! The oven is not needed so when we get into those hot summer days and you don’t want to heat up the kitchen, this is the dessert to make!
The crust might be the best part! It is made using Cocoa Krispies!! I have not bought a box of these in a very, very long time, but they make the best pie crust.
The other ingredient that makes this crust, chopped peanuts. Now I am NOT a fan of nuts in dessert, but this is an exception and you just need 1/2 cup finely chopped.
Mix the cereal and nuts in a bowl with some melted butter.
Press into a pie pan. Then just pop into the freezer to set the crust about 15-30 minutes.
Melt some creamy peanut butter in the microwave for about 30 seconds, stirring until smooth, then let cool.
Next put 4 cups of softened vanilla ice cream in a mixing bowl and whip for about 30 seconds.
Add the cooled peanut butter and beat for another 30 seconds. The two blend perfectly together!
Spread evenly over the crust. Place the pie back in the freezer and freeze for 8 hours or overnight.
Finally, the whipped cream topping which is heavy whipping cream, vanilla, and a few Tablespoons of powdered sugar beaten at high speed until light and fluffy. Spread evenly over the pie.
For the final touch, drizzle hot fudge over the top of each piece. I used Hershey’s Syrup because we love the taste!
No need to wait on the ice cream man…
