Treat Tuesday-Mexican Wedding Cookies

Happy Cinco De Mayo! While everyone is probably thinking Margaritas for this fifth day of May, I’ve had a few too many of those during our quarantine time. In fact I have been pretty focused on eating and drinking but not sharing my treats, yikes! As the sun shines more and the air warms, I’m feeling less like a hermit and more inspired. So get ready for some great treats! On to these tasty cookies…

You start with some room temperature butter and whip it until it is nice and fluffy.

Next toss in some powdered sugar and mix that in really well.

A little vanilla and salt.

Now flour and cinnamon is sifted and added to the dough.

Mix well and refrigerate for about one hour.

Roll the dough into balls and bake for 15 minutes.

Let cool for five minutes and then roll in powdered sugar. Let cool completely and then give them another toss in the powdered sugar.

Perfect cinnamon butter cookies…maybe try one with a Margarita!
