Treat Tuesday! Lemon Bars
I was one of the hosts of a wonderful graduation party last week, and I brought leftovers home to my family, but apparently I did not pack enough Lemon Bars…hence today’s treat! And lest you think my family has been suffering and not getting Treat Tuesday, rest assured, they have been well taken care of, I just haven’t been able to get to my computer in the last couple of weeks. How does that happen? Do you have any tips for not letting time get away from you?!?
These bars start with wonderfully juicy lemons which seem to be in abundance in the supermarket these days. Don’t even think about making these bars using lemon juice in a bottle on the shelf in the store next to the peanut butter.
It is time to get out your juicer and a exert a little elbow grease!
The crust is just three ingredients: flour, powdered sugar, and butter. It is a shortbread crust (is there anything better?) that cooks before you put the lemon batter on top.
Once the crust is in the oven, the filling just whisks together. Zest the lemon before you cut it, your kitchen will smell like spring!
Pour the lemon mixture over the warm crust and bake until firm. Let cool completely before cutting into squares. I usually refrigerate the bars for a couple of hours before I slice into them.
