Treat Tuesday-Ice Cream Cake
“You scream, I scream, we all scream for ice cream!” It was 106 degrees here yesterday. Ice cream is the only way to cope. It is even better if it is made into a cake, or at least cake shaped.
Can you imagine if your neighborhood ice cream man could deliver this treat to your house?
It all starts with a cookie crust. My recipe calls for chocolate wafers, the Nabisco Famous Chocolate wafers. I’m not sure why they are famous, but there are times I can’t find them stocked on the shelves, maybe that has something to do with the fame? If you find yourself in this situation, never fear, Oreo Cookies will work in a pinch.
Crush the cookies up so they are fine crumbs.
Then spread ice cream over the cookie crust. For some reason I always use mint chocolate chip, but feel free to substitute your favorite flavor. The best way to spread the ice cream is to first put it in a bowl and turn it over several times with a spatula. This way it softens evenly. Now freeze it overnight.
I have to share a photo of this recipe. This is how a lot of my favorites look, but when I flipped over the first page, I found a date on an old receipt, July 24, 1984.
That would explain the back of the second page with the bubble letters and apparently my favorite songs of the time. Oh the 80’s were great!
Now that the ice cream has hardened back up, you add a layer of chocolate ganache. When this layer is frozen, it becomes a fabulously rich, gooey chocolate treat.
Finally the whipped cream layer and yes, this gets frozen as well.
This is so much better than chasing that ice cream truck down the street and having your cone melt before you get back to your house!
