Treat Tuesday-Ginger Snaps
Lest you think I have not been baking up a storm during the Christmas Holidays, I give you not one, but two for Treat Tuesday! First up is probably my most favorite cookie, and it’s not even chocolate!!
These are crisp on the outside and soft and chewy on the inside. Rolled in granulated sugar before baking, they are highly addictive and perfect for filling your Christmas cookie jar.
The dough comes together quickly, an hour in the fridge and then you roll into balls and bake. Serve these with a glass of eggnog or a nice cup of tea.
One of my other favorites for the holiday season is this Cranberry Bread. I use whole, fresh cranberries. This is about the only time of year you can purchase them, so get a few bags to throw in the freezer for later.
This batter is a “dump and mix” type, and while I am not a huge fan of raw cake batter, this stuff is worthy of sticking your finger in the bowl and licking it clean!
After one hour you have perfectly golden brown loaves of bread. Enjoy one now and freeze one for Christmas morning. Or give as gifts!
