Treat Tuesday-Brownie Pie

I made this for Pi-Day…and it can be served two delicious ways! Cut a piece after it has cooled on the countertop and add a scoop of vanilla ice cream for a chocolatey, gooey dessert. You can also place it in the refrigerator to firm it up and have it more the consistency of a brownie. You can’t go wrong either way!

To make this treat start with the best crust. Graham crackers crushed in a food processor.

Add some light brown sugar and cinnamon.

Then add melted butter to get the crumbs to come together.

Press into the bottom and up the sides of a deep dish pie pan.

Now for the brownie filling. Start with high quality unsweetened chocolate.

In the top of a double boiler add the chocolate with butter and stir just until melted.

While the chocolate mixture is cooling, add sugar, eggs, and egg yolks to a large bowl.

Whip with an electric mixer until thick and pale yellow.

Fold in vanilla and the cooled chocolate mixture.

Add sifted flour and baking powder.

Spoon the chocolate brownie batter into the chilled graham cracker crust.

Sprinkle with powdered sugar and bake for exactly 30 minutes.

Let cool on a wire rack.

Everyday can be Pi(e)-Day.
