Brownie Ice Cream Sandwiches

 

I actually made these for Treat Tuesday last week and they were the perfect summer snack!  The brownies are fudge-y and if you add the ice cream after the brownies have been chilled, it is a wonderfully gooey treat.  Bake the brownies and then let them cool completely.  Once cool, flip out of the pan, peel off the foil and cut into squares.  The wrap each square in wax paper and place in the fridge for an hour before adding the ice cream to keep the brownies from coming apart when you make the sandwiches.

Brownies

Ingredients:

3/4 cup butter
1-4 oz. bittersweet dark chocolate baking bar, chopped
1 1/4 cups sugar
2 eggs
1 cup all-pupose flour
1 teaspoon vanilla extract
1/4 teaspoon baking powder
1/8 teaspoon salt
Vanilla Ice Cream-slightly softened

Preheat oven to 350 degrees.  Line the bottom and sides of a 15″ x 10″ jelly roll pan with aluminum foil, allowing 2-3 inches to extend over the sides; lightly grease the foil with cooking spray.  In a small saucepan over low heat, melt the butter and chocolate until smooth.  Pour into a large bowl and whisk in the sugar.  Add the eggs one at a time, stirring gently until combined.  Add the flour, vanilla, baking powder, and salt stirring just until blended.  Pour into pan.  Bake at 350 degrees for 18 minutes or until a wooden pick inserted in center comes out with a few moist crumbs.  Cool completely on a wire rack.  Lift brownies from pan, using foil as handles.  Remove foil and cut into squares.  Once cooled and chilled, add slightly softened ice cream to make the sandwiches.
