Glazed Orange-Cranberry Loaf Cake 2.0

This Glazed Orange-Cranberry Loaf felt like the perfect answer for this continuing cold winter. I’ve published this recipe before but thought it was a good time to revisit this great treat.

First, pull out the bag of cranberries from the freezer you bought during the holidays and measure out one cup.

Sprinkle one tablespoon of flour over the cranberries and set aside.

Next blend the softened butter with sugar, and add the eggs, mixing well. Then add the flour mixture alternately with milk. Fold in freshly grated orange zest. Finally mix in the cranberries.

Pour the batter into a loaf pan and bake for one hour.

Cool for about 15 minutes before removing the cake from the pan.

Finally combine sugar and freshly squeezed orange juice and boil for 30 seconds. After poking holes in the cake with a toothpick, apply the glaze over the top of the cake.
Enjoy a slice with a nice warm beverage!
