Pork and Sweet Pepper Kebabs
This is a quick meal that you can throw on the grill, make some rice, and have a delicious dinner without much fuss. Presoak the wooden skewers for 30 minutes before using, or metal skewers will work well too.
Ingredients
- ¼ cup soy sauce
- 1 Tablespoon fresh lemon juice
- 1 Tablespoon ketchup
- 2 teaspoons light brown sugar
- 1 teaspoon Worcestershire sauce
- ¼ teaspoon crushed red pepper
- 4 cloves garlic
- 1 1 lb. pork tenderloin trimmed and cut into ½" cubes
- ¼ teaspoon salt
- 1 pkg. mini bell peppers
Instructions
- Place first seven ingredients in a large ziplock bag, mix well.
- Add pork cubes and refrigerate one hour, turning after 30 minutes.
- Preheat grill to medium-high heat. Remove pork from bag and discard marinade.
- Thread pork evenly onto skewers, sprinkle with salt.
- Thread mini bell peppers on skewers.
- Arrange skewers in a single layer on grill rack and grill 3-4 minutes a side.
