Panko Pork Tenderloin

Ingredients
  

  • ¾ cup panko bread crumbs
  • 2 teaspoons ground fresh oregano
  • 2 1 lb. pork tenderloins
  • 2 Tablespoons Dijon mustard

Method
 

  1. Preheat oven to 450°.
  2. Mix bread crumbs and oregano in a baking dish.    
  3. Spread the Dijon mustard over the pork.
  4. Roll pork in the breadcrumb mixture.
  5.  Place in a roasting pan and roast in the oven at 450° for 30-45 minutes.  Serve with mashed potatoes.
