Hash Brown Bake

This takes a little bit of cooking time, but you can be preparing other items for the Thanksgiving day meal and then enjoy this for brunch!

Ingredients
  

  • 1 16 oz. pkg. frozen shredded hash browns (I used Alexia's), thawed between two paper towels
  • cup butter melted
  • 1 cup finely chopped cooked ham
  • 1 cup shredded Cheddar cheese
  • 2 large eggs beaten
  • ½ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Preheat oven to 425°.         
  • Press the potatoes into the bottom and up the sides of a deep dish pie plate.
  • Drizzle the melted butter over the potatoes.
  • Bake at 425° for 25 minutes or until lightly browned; cool on a wire rack 10 minutes.
  • Reduce heat to 350°.
  • Combine the ham and cheese.  Spoon over the hash browns.
  • Combine eggs, milk, and seasoning, whisking well.  Pour over the ham mixture.
  • Bake at 350° for 25-30 minutes or until set.  Let stand 10 minutes before serving.
