Checkerboard Spice Cake
This is fall in a loaf pan! Take the time to divide the batter, it looks great on a plate and it tastes even better!Plan Ahead Note: the butter needs to be softened and the eggs brought to room temperature.
Ingredients
- ½ cup butter softened to room temperature
- 1 cup granulated sugar
- 2 eggs at room temperature
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ⅔ cup milk
- ¼ teaspoon ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- 3 Tablespoons molasses
Instructions
- Preheat oven to 350°.
- Cream butter and gradually add in sugar, mixing well.
- Add eggs, one at a time, beating mixture well after each addition.
- Combine flour, baking powder, and salt.
- Add to butter mixture alternately with milk, beginning and ending with flour mixture.
- Divide the batter in half.
- Add remaining ingredients to one half of the batter, stirring until smooth.
- Drop batter by Tablespoonfuls into a greased 9" x 5" x 3" loaf pan, alternating dark and light batter.
- Bake at 350° for 1 hour or until wooden pick inserted into center comes out clean.
