Checkerboard Spice Cake

This is fall in a loaf pan!  Take the time to divide the batter, it looks great on a plate and it tastes even better!
Plan Ahead Note: the butter needs to be softened and the eggs brought to room temperature.

Ingredients
  

  • ½ cup butter softened to room temperature
  • 1 cup granulated sugar
  • 2 eggs at room temperature
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • cup milk
  • ¼ teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 3 Tablespoons molasses

Method
 

  1. Preheat oven to 350°.
  2. Cream butter and gradually add in sugar, mixing well.          
  3. Add eggs, one at a time, beating mixture well after each addition.
  4. Combine flour, baking powder, and salt.
  5. Add to butter mixture alternately with milk, beginning and ending with flour mixture.
  6. Divide the batter in half.
  7. Add remaining ingredients to one half of the batter, stirring until smooth.
  8. Drop batter by Tablespoonfuls into a greased 9" x 5" x 3" loaf pan, alternating dark and light batter.
  9. Bake at 350° for 1 hour or until wooden pick inserted into center comes out clean.
