Pumpkin Pie Bars

These bars taste just like Pumpkin Pie!
Plan Ahead Note: the cream cheese needs to be softened and the eggs brought to room temperature.

Servings: 24 bars
Course: Halloween

Ingredients
  

  • 1 ⅓ cups flour
  • ½ cup brown sugar packed
  • ¾ cup granulated sugar
  • ¾ cup butter cut into cubes and chilled
  • 1 cup old-fashioned oats
  • 1 8oz. pkg. cream cheese softened
  • 3 eggs room temperature
  • 1 15oz. can pumpkin
  • 1 Tablespoon pumpkin pie spice

Method
 

  1. Preheat oven to 350°.
  2. Line a 13" x 9" pan with aluminum foil. Grease foil.
  3. Mix flour, brown sugar and ¼ cup sugar in medium bowl.
  4. Cut in butter with pastry blender until mixture represents course crumbs.
  5. Stir in oats.
  6. Reserve 1 cup oat mixture and press remaining mixture into bottom of pan.
  7. Bake 15 minutes at 350°.
  8. Beat cream cheese with remaining ½ cup sugar until light and fluffy.
  9. Add in eggs, pumpkin and pumpkin pie spice in mixer until well blended.
  10. Pour over crust and sprinkle with reserved crumb mixture.
  11. Bake 25 minutes. Cool completely. Cut into bars and store in refrigerator.
