



Frosted Pumpkin Softies
These cookies are perfect for your Halloween party! Keep refrigerated right before serving to set the cream cheese frosting. The perfect cake-like cookie looks festive for pumpkin day, you can even use food coloring and turn the frosting orange!!Plan Ahead Note: the butter and cream cheese need to be softened to room temperature.
Ingredients
Cookies
- 1 cup butter softened
- ¾ cup firmly packed brown sugar
- ¾ cup granulated sugar
- 1 cup canned pumpkin
- 1 egg
- 1 teaspoon vanilla
- 2 ½ cups quick or old-fashioned oats uncooked
- 1 ¾ cup all-purpose flour
- 1 teaspoon pumpkin pie spice or ground cinnamon
- 1 teaspoon baking soda
- ¼ teaspoon salt
Frosting
- 3 oz. cream cheese softened
- 1 Tablespoon milk
- ½ teaspoon vanilla
- 2 ½ cups powdered sugar
Instructions
Cookies
- Heat oven to 350°.
- Beat together butter and sugars until creamy.
- Add pumpkin, egg, and vanilla, beat well.
- Add combined oats, flour, pumpkin pie spice, baking soda, and salt, mix well.
- Drop by rounded teaspoonfuls onto ungreased cookie sheet.
- Bake 11 to 13 minutes or until light golden brown.
- Cool 1 minute on cookie sheet; remove to wire rack. Cool completely.
Frosting
- Beat together cream cheese, milk, and vanilla until smooth.
- Gradually beat in powdered sugar until smooth.
- Frost cookies, store covered in refrigerator.
