Frosted Pumpkin Softies

These cookies are perfect for your Halloween party! Keep refrigerated right before serving to set the cream cheese frosting. The perfect cake-like cookie looks festive for pumpkin day, you can even use food coloring and turn the frosting orange!!
Plan Ahead Note: the butter and cream cheese need to be softened to room temperature.

Ingredients
  

Cookies

  • 1 cup butter softened
  • ¾ cup firmly packed brown sugar
  • ¾ cup granulated sugar
  • 1 cup canned pumpkin
  • 1 egg
  • 1 teaspoon vanilla
  • 2 ½ cups quick or old-fashioned oats uncooked
  • 1 ¾ cup all-purpose flour
  • 1 teaspoon pumpkin pie spice or ground cinnamon
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Frosting

  • 3 oz. cream cheese softened
  • 1 Tablespoon milk
  • ½ teaspoon vanilla
  • 2 ½ cups powdered sugar

Instructions
 

Cookies

  • Heat oven to 350°.
  • Beat together butter and sugars until creamy.
  • Add pumpkin, egg, and vanilla, beat well.
  • Add combined oats, flour, pumpkin pie spice, baking soda, and salt, mix well.
  • Drop by rounded teaspoonfuls onto ungreased cookie sheet.
  • Bake 11 to 13 minutes or until light golden brown.
  • Cool 1 minute on cookie sheet; remove to wire rack. Cool completely.

Frosting

  • Beat together cream cheese, milk, and vanilla until smooth.
  • Gradually beat in powdered sugar until smooth.
  • Frost cookies, store covered in refrigerator.
