Queso Quiche with Avocado Salsa
This recipe is great for Christmas morning and is a nice twist on a traditional quiche. Make sure you purchase a really large pie crust or make your own deep dish one.

Quiche
crust for a 9" deep dish pie

lb.
ground beef
¼
cup
diced onion

can (4 ½ oz.)
chopped green chilies

Tablespoons
taco seasoning mix
1 ½
cups
grated cheddar cheese
3
eggs
1 ½
cups
half-and-half
½
teaspoon
salt
⅛
teaspoon
freshly ground black pepper
shredded lettuce
diced tomatoes
Avocado Salsa
2
ripe avocados, mashed
1
clove
garlic, minced
3
Tablespoons
fresh lime juice
1
tomato
diced
1
jalapeño pepper
seeded and minced
Instructions
Quiche
Preheat oven to 400°.
Bake pie crust for 7 minutes. Remove from oven and reduce heat to 375°.
Brown ground beef, onion, green chilies and taco seasoning. Drain.
Sprinkle cheese over bottom of pie crust and spread with beef mixture.
Beat eggs, half-and-half, salt and pepper. Pour over pie.
Bake until a knife inserted off-center comes out clean, 45 minutes.
Let stand for 10 minutes. before cutting. Serve with Avocado salsa, shredded lettuce and tomatoes on the side.
Avocado Salsa
Combine all ingredients, cover and chill until ready to serve.
