Belgian Spice Cookies

These cookies are fun to make during the holidays and the smell of the spices as they cook turn your kitchen into Santa's workshop!
Plan Ahead Note:  The butter needs to soften to room temperature and the dough will need to chill for 4 hours.

Ingredients
  

  • 1 cup all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 2 teaspoons pumpkin pie spice divided
  • ½ cup butter softened
  • ¼ cup tubinado sugar
  • ¼ cup light brown sugar firmly packed
  • ½ cup powdered sugar

Instructions
 

  • Stir together first 4 ingredients and 1 teaspoon pumpkin pie spice in a  small bowl.
  • Beat butter and next two ingredients in a medium bowl at medium speed with an electric  mixer 2-3 minutes or until well combined.  
  • Stir in flour mixture just until blended.
  • Shape dough into a 2" log, wrap in plastic wrap, and chill 4 hours.
  • Preheat oven to 325°.          
  • Slice dough log into 1/4" thick rounds.
  • Place cookies about 1" apart on a parchment lined baking sheet.
  • Bake at 325° for 10-14 minutes or until cookies are fragrant and dry.  Cool completely on a wire rack (about 30 minutes).
  • Stir together powered sugar and remaining teaspoon of pumpkin pie spice.  Sift powdered sugar mixture over cookies.
