Yellow Cupcakes

Looking for a cupcake perfect for birthday parties?  This one is sure to be popular among kids and adults.


1/3 cup butter, softened
3 Tablespoons shortening
1 cup sugar
2 eggs
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla
1/2 cup semi-sweet chocolate chips
1/4 cup milk
1/4 cup plus 2 Tablespoons butter
1 1/4 cups sifted powdered sugar

Cream butter and shortening in an electric mixer.  Add sugar and beat until light and fluffy.  Add eggs one at a time until well blended.  Combine flour, baking soda, and salt in a small bowl.  Add to butter mixture alternately with buttermilk.  Stir in vanilla.  Spoon batter into muffin tin lined with paper muffin cups.  Bake at 350 degrees for 20-25 minutes.  Once completely cool, frost with Chocolate Frosting.

Chocolate Frosting:  Combine chocolate chips, milk, and butter in a saucepan over low heat, stirring until the chocolate is melted.  Remove from heat and add vanilla and powdered sugar beating well with a hand mixer.  Set saucepan on ice and beat until frosting holds it’s shape and loses it’s gloss.  Add a little more milk to make the frosting spreadable.

Yield: 18 cupcakes
