Yellow Cupcakes

Ingredients
  

Cupcakes
  • cup butter softened
  • 3 Tablespoons shortening
  • 1 cup sugar
  • 2 eggs
  • 1 ¾ cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
Frosting
  • ½ cup semi-sweet chocolate chips
  • ¼ cup milk
  • ¼ cup+2 Tablespoons butter
  • 1 ¼ cups sifted powdered sugar

Method
 

Cupcakes
  1. Preheat oven to 350°.
  2. Cream butter and shortening in an electric mixer.         
  3. Add sugar and beat until light and fluffy.
  4. Add eggs one at a time until well blended.
  5. Combine flour, baking soda, and salt in a small bowl. Add to butter mixture alternately with buttermilk.  Stir in vanilla.
  6. Spoon batter into muffin tin lined with paper muffin cups.
  7. Bake at 350° for 20-25 minutes.  Once completely cool, frost with Chocolate Frosting.
Frosting
  1. Combine chocolate chips, milk, and butter in a saucepan over low heat, stirring until the chocolate is melted.
  2. Remove from heat and add vanilla and powdered sugar beating well with a hand mixer.
  3. Set saucepan on ice and beat until frosting holds it's shape and loses it's gloss.  Add a little more milk to make the frosting spreadable.
