Peanut Butter Chocolate Cookies

These cookies are a great after school snack. If you don't have time house a pastry bag to pipe the frosting, grab a spoon and drizzle over each cookie. Place wax paper under your cookie rack and clean up will be a snap.

Ingredients
  

Cookies
  • 1 ½ cups flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ¼ cup creamy peanut butter
  • 2 Tablespoons butter softened
  • ¼ cup milk
  • 2 eggs
  • ½ teaspoon vanilla
Peanut Butter Icing
  • ¾ cup powdered sugar
  • 2 Tablespoons milk
  • 1 Tablespoon whipping cream
  • 3 Tablespoons peanut butter
Chocolate Icing
  • ¼ cup semi-sweet chocolate chips
  • ¾ cup powdered sugar
  • 1 ½ Tablespoons milk
  • 1 Tablespoon whipping cream
  • 1 teaspoon unsweetened cocoa sifted

Method
 

Cookies
  1. Preheat oven to 375°.
  2. Combine sugar, peanut butter, and butter in a large bowl.  Mix with an electric mixer for 2 minutes.        
  3. Add milk.  Mix well.
  4. Add eggs and vanilla, beat well.
  5. Add flour, baking powder, and salt, mixing until well blended.
  6. Drop dough by teaspoonfuls onto a silicone mat on a cookie sheet.
  7. Bake at 375° for 11 minutes.
  8. Let stand on pan for one minute, then remove to wire rack to cool.  Frost with peanut butter icing and chocolate icing.
To Make Peanut Butter Icing
  1. Whisk and place in pastry bag to pipe on cookies.
To Make Chocolate Icing
  1. Melt chocolate chips over low heat. Whisk in remaining ingredients, place in pastry bag to pipe on cookies.
