Cast-Iron Cookies
Something about cooking in a cast-iron skillet makes everything taste great, baking in one is even better! My skillet is 12" and it worked great.Plan Ahead Note: the butter needs to be softened to room temperature.
Ingredients
- 1 cup light brown sugar
- ½ cup granulated sugar
- ½ cup salted butter softened to room temperature
- 1 egg
- 3 Tablespoons milk
- 1 ½ teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 pkg. semi-sweet chocolate chips divided
Instructions
- Preheat oven to 325°.
- Lightly coat a 10" cast-iron skillet with cooking spray.
- Beat brown sugar, granulated sugar, and butter with a heavy-duty electric stand mixer at medium speed until light and fluffy.
- Add egg, milk, and vanilla, beating until blended.
- Whisk together flour, baking soda, and salt in a bowl.
- Add to butter mixture gradually beating at low speed until combined.
- Add half the package of chocolate chips and mix well.
- Spread mixture evenly in prepared skillet.
- Top with remaining chocolate chips.
- Bake until golden and set, about 40-50 minutes.
- Let stand 15 minutes, cut into wedges. Serve with vanilla ice cream.
