Cast-Iron Cookies

Something about cooking in a cast-iron skillet makes everything taste great, baking in one is even better! My skillet is 12" and it worked great.
Plan Ahead Note: the butter needs to be softened to room temperature.

Ingredients
  

  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • ½ cup salted butter softened to room temperature
  • 1 egg
  • 3 Tablespoons milk
  • 1 ½ teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 pkg. semi-sweet chocolate chips divided

Instructions
 

  • Preheat oven to 325°.            
  • Lightly coat a 10" cast-iron skillet with cooking spray.
  • Beat brown sugar, granulated sugar, and butter with a  heavy-duty electric stand mixer at medium speed until light and fluffy.
  • Add egg, milk, and vanilla, beating until blended.
  • Whisk together flour, baking soda, and salt in a bowl.
  • Add to butter mixture gradually beating at low speed until combined.
  • Add half the package of chocolate chips and mix well.
  • Spread mixture evenly in prepared skillet.
  • Top with remaining chocolate chips.
  • Bake until golden and set, about 40-50 minutes.  
  •  Let stand 15 minutes, cut into wedges.  Serve with vanilla ice cream.
