Cast-Iron Cookies

Something about cooking in a cast-iron skillet makes everything taste great, baking in one is even better! My skillet is 12" and it worked great.
Plan Ahead Note: the butter needs to be softened to room temperature.

Ingredients
  

  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • ½ cup salted butter softened to room temperature
  • 1 egg
  • 3 Tablespoons milk
  • 1 ½ teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 pkg. semi-sweet chocolate chips divided

Method
 

  1. Preheat oven to 325°.            
  2. Lightly coat a 10" cast-iron skillet with cooking spray.
  3. Beat brown sugar, granulated sugar, and butter with a  heavy-duty electric stand mixer at medium speed until light and fluffy.
  4. Add egg, milk, and vanilla, beating until blended.
  5. Whisk together flour, baking soda, and salt in a bowl.
  6. Add to butter mixture gradually beating at low speed until combined.
  7. Add half the package of chocolate chips and mix well.
  8. Spread mixture evenly in prepared skillet.
  9. Top with remaining chocolate chips.
  10. Bake until golden and set, about 40-50 minutes.  
  11.  Let stand 15 minutes, cut into wedges.  Serve with vanilla ice cream.
